Chasing Brownies

I had different plans for today’s post, but thunderstorms came Rolling In The Deep last night and all I wanted to do was bake brownies while listening to Adele. You could say I was Set[ting] Fire To The Rain.

Imagine my surprise when I woke up this morning and learned my One and Only queen’s first single from her album,  25, was just chillin’ in iTunes. And then I was smacked in the face with this:

Did she know that I was in a mood last night while baking up a storm, silently wondering when I would be able to sing along to a new song?

I said hi back and pre-ordered the album which is scheduled to be released on November 20th. So look out for a more detailed post about why I love Adele so much around then. It’ll probably be titled “Thanks for giving us this album”.

On to the brownies! These pair well with melancholy.

1 ½ sticks unsalted butter (3/4 Cup)
8 ounces chocolate chips
3 Large room-temperature eggs
1 cup light brown sugar
½ Cup granulated (white) sugar
1 teaspoon pure vanilla
1 Cup all-purpose flour
½ teaspoon baking powder
½ teaspoon salt

Heat butter and chocolate in a microwave safe bowl for 30 seconds. Stir.

If the mixture is still too lumpy to mix until fully melted, heat for 15 additional seconds. Put the mixture aside to cool. This amount of lump is okay, it will smooth out when you stir.

Add both sugars to eggs and whisk until sugar is mostly dissolved. Also add vanilla at some point while you're whisking up a storm.

Slowly mix in the cooled chocolate mixture. I did this step to the song Rumor Has It and I have never felt more empowered.

Sprinkle flour, baking powder, and salt onto the top of the egg mixture.

Gently mix dry ingredients through the batter until it looks well dispersed. Go with me here.

Now fold into batter until just incorporated. Basically fold until you no longer see white.

Pour brownie batter into your greased pan and bake at 350 degrees F for 40-45 minutes.

You’ll know it is done when a toothpick comes out slightly crumbly. He Won’t Go for seconds if that brownie is too done, so make sure you don’t keep the pan in the oven for too long!

It’s hard to resist a warm brownie after a night in with your feelings, that I know. Try your hardest to let them cool for at least an hour though, but they are actually better if they have had a chance to cool completely overnight.

  1. Loved this post! Perfect amount of Adele references and chocolate! I never thought of adding cold brew into my brownies, but now I know what I will be doing tonight! (:

      Thank you! I have been experimenting with what I can add cold brew into and this is probably the best way I have used it this far. I am too embarrassed to even tell anyone what else I’ve tried using it in.
